Baked Sweet Potato Fries with Blue Cheese Dip

It’s the Super Bowl countdown and the perfect time to try out some new crowd-pleasing appetizers.  Baked Sweet Potato Fries with Blue Cheese Dip are a delicious alternative to the usual greasy fare.  Try out the recipe at your party this weekend…what else will you be serving?

 

Ingredients:

Sweet Potato Fries

4 sweet potatoes, peeled and sliced into matchsticks

Olive oil

Salt and pepper

 ½ teaspoon cayenne pepper

 

Blue Cheese Dip

1 cup nonfat, plain Greek yogurt

4 ounces crumbled blue cheese

Juice from ½ lemon

Dash of Worcestershire sauce

Salt and pepper to taste

Chopped fresh chives

 

Directions:

Preheat oven to 450° and line a cookie sheet with foil or parchment paper.  Toss sweet potatoes lightly with olive oil, cayenne pepper, salt and pepper.  Spread sweet potatoes in a single layer over the prepared cookie sheet.  Bake until sweet potatoes are tender and golden brown, about 20-25 minutes.  Turn sweet potatoes once during cooking. 

 

For blue cheese dip, mix all ingredients together in a bowl.  Serve with baked sweet potato fries.
